Tomato Pesto Shrimp




Ingredients:

  • 1-2 tbsp Olive Oil

  • 1 container sliced white mushrooms

  • 1/2 lb raw shrimp

  • 1 bag spinach

  • 1 red bell pepper

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp lemon juice

  • 1 tbsp minced garlic

  • Parsley

  • thyme

  • 1/2 jar Orti de Calabria Garlic, Tomato, & chili stir in sauce

  • 1/2 jar Sun dried Tomato Pesto


Cook:

Heat skillet to medium heat, add olive oil & mushrooms. Let cook for about 1 to 2 minutes, then add the shrimp, spinach & bell peppers. Once Spinach is cooked down, season with the minced garlic, salt, garlic powder, pepper, lemon juice & thyme, give everything a toss then add in the stir in sauce & tomato pesto. Cook until shrimp is fully cooked & sauce is a smooth consistency. Garnish with parsley.
