Stuffed Turkey Meatballs

Ingredients:

Olive oil

2 cups Spinach

1 lb Ground turkey

1 egg

1/2 cup breadcrumbs

1 tbsp garlic powder

2 cloves minced garlic

1 tbsp Italian seasoning

1/4 Onion chopped

Oregano

Basil

pepper

Parmesan or mozzarella cheese

Tomato sauce



2 tbsp Olive oil

Cauliflower rice

Thyme


Add 1 tsp olive oil to pan, add spinach and cook down until tender. Place in the fridge to cool.

Mix the ground turkey, egg, breadcrumbs, onions and seasonings together in a bowl. (Depending on how many/how big you would like the meatballs) Scoop a medium sized amount and flatten out like you would be making a hamburger, add the spinach and cheese, then make it into a ball. Repeat this until all the turkey mix is gone.


Cook:

In a small, deep pan, spread out the cauliflower bits, sprinkle over the thyme and olive oil.

Place the meatballs evenly on top and pour over the tomato sauce. Sprinkle leftover cheese on top and salt & pepper to taste. Bake at 375 for 20 min.


You can also cook them in a skillet, turning them until brown on all sides.
