Quick, Easy & Savory Meal Prep

Sometimes it can be hard to think of interesting things to cook and think of new recipes; especially something healthy. I usually find inspiration from various sources, I can just get creative with what I have at home at the time or from a dish that I've eaten while out. I had some fried Brussels sprouts the other day and they were soooo good, I thought, why have I never cooked with these before?! I needed to get back in my healthy meal prep mode so I thought of a quick and delicious meal where I really just threw a bunch of things together that I had in the fridge, but they also complimented each other very well, and were quick and easy to cook!


Makes about 4-5 meals


Roasted Brussels Sprouts & Red potatoes

  • 1 sheet pan

  • 1 1/2 lb Brussels sprouts

  • About 5-6 small red potatoes

  • 3 tbsp olive oil

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp thyme

  • 1 tsp garlic powder

  • 1 tbsp oregano

Prep:

heat oven to 350. Rinse and chop potatoes into smaller pieces. Chop garlic cloves. Smash a few brussel sprouts.


Cook:

In a bowl, add all ingredients and mix together. Lay out evenly on a sheet pan and bake in oven for 20min. Flipping halfway through.

Spicy Garlic Shrimp

  • 1 lb shrimp

  • Chili flakes

  • 1 tbsp butter

  • 1-2 garlic cloves (chopped)

  • 1 tsp garlic powder

  • Oregano

-Remove mushrooms from pan, add butter, shrimp and all other ingredients. Cook until done, about 4-5 min.
