This pesto recipe is so easy, yet so delicious, that you will probably want to eat it once a week! Requires very few ingredients & very little prep & cook time.
1 jar pesto
Salt & pepper
(optional egg, cooked how you like, over hard, sunny-side up, etc)
Boil pasta until 'al dente'. Drain, keeping 1/2 cup of pasta water.
Chop garlic cloves.
Heat skillet to medium heat, pour in olive oil in pan, add shrimp. Then add chopped garlic.
When shrimp is just about done, lower heat and add spinach, pesto sauce and salt & pepper to taste. Add in pasta & pasta water as needed to loosen pesto sauce. mix ingredients together.
Garnish with Parmesan cheese & oregano, and egg on top! Serve!
