Pesto Chicken


  • 5 thin sliced Chicken breasts

  • 1 tbsp. olive oil

  • 1 tsp. garlic powder

  • 1/2 cup low sodium chicken stock

  • 1 jar pesto

  • 1/2 tsp. salt

  • 1 tbsp. pepper

  • provolone (optional)

  • 1 cup rice


In a skillet/pan, cover bottom with olive oil and place chicken. Season with garlic powder and 1/2 tbsp. of pepper. Cook on both sides until done, about 2-3 minutes each side. In a sauce pan, add the chicken stock, pesto, salt and pepper, on low heat. Stir, while heating for about 2 minutes. Pour on top of chicken and let simmer for a minute. Add slices of provolone cheese on top. Serve chicken on top of rice and spoon extra pesto sauce on top! and serve!
