Shrimp & Zoodles
Updated: Jun 27, 2019
I have been trying to eat healthy the last couple weeks just to get fit for the summer, and its been pretty successful. I have been eating pretty basic, bland "dieting food" but I realized it doesn't have to all be boring. So here is a flavorful, but healthy, diet worthy dish that tastes great! Your welcome!

Makes about 3 meals.
What you'll need:
1 package of HEB Zucchini Spirals
1/2 lb. of large shrimp
1 red or yellow bell pepper (chopped)
2 tbsp. olive oil
2 tbsp. minced garlic
half a jar of marinara/spaghetti sauce
Salt & Pepper
How to:
Turn the stove to medium heat. In a pan, add 1 tbsp. of olive oil, 1 tbsp. garlic, add the spirals and sauté according to the package. (about 3-4min). Sprinkle a dash of salt & pepper for taste.
Remove spirals from pan and put them to the side for later. Next, if needed, add the other tbsp. of olive oil and garlic to pan and then add shrimp. Season shrimp how you would like (I used a little salt & pepper). Add chopped bell peppers. Cook for a few minutes until shrimp is done & bells are a little soft. Turn heat down to simmer/low, and add sauce.
At this time you can add the zucchini spirals to pan and mix together, or you can serve the sauce on top of spirals. Then enjoy!
