Salmon & Veggies
This recipe was inspired from a recipe I found online a few years ago. Depending on my mood, or what I have at home, I usually switch up the veggies every time.
Using half a salmon filet will help me meal prep for about 3 days (only 3 meals) when I eat this by itself.
Red & Green bell peppers (1 each)
1 head of broccoli (washed & cut end of stem)
2 handfuls of mushrooms
1 Cucumber (chopped)
1 handful Alfredo noodles
1 tbsp. olive oil
1 large lime
1tsp garlic powder
salt & pepper to taste
Boil noodles for about 10 min. Drain, then transfer to a bowl(If you prefer your broccoli to be soft, use the same water to boil after noodles are done. I prefer a little crunch so I cook the broccoli in a pan with the other vegetables).
In a pan, add olive oil, bell peppers(chopped), broccoli mushrooms, & cucumber. Sauté until cucumber is slightly brown on edges. Transfer to bowl. In the same pan, place salmon to pan fry, a little more olive oil if needed. Sprinkle with garlic powder. Cook on both sides for about 4min on one side, flip and then 3min on the other. I also like to sear the sides, but don't over cook your salmon! Then add to bowl.
Cut avocado into pieces, & add to owl
In a small bowl, mix the juice of a lime, thyme, oregano & salt & pepper, pour over contents in bowl, toss everything together & serve!
