Garlic Chicken & Citrus Avocado Sauce
Updated: Jun 27, 2019
Serves 4
Ingredients:
Chicken
thin slicked chicken breasts
2 garlic cloves
2 tbsp. chopped onions
garlic powder
black pepper
Tony's seasoning (season all)
basil
olive oil
Avocado sauce
blender
3 small avocados
juice of 3 limes
juice of 1 large lemon
about a handful of cilantro
1 garlic clove
1 tbsp. chopped onion
salt & pepper to taste
Preheat pan/skillet. Lightly coat the pan with olive oil. Add the onions and garlic cloves, (let cook while you season the chicken). Season chicken on both sides then add to pan. Cook on both sides thoroughly (since its thin, don't cook too long or you may dry it out; you can always check the center of the chicken to make sure it is white all the way through).
To make the sauce, slice the avocado and add to blender along with the onions, cilantro, garlic, lemon juice, lime juice and salt and pepper. Blend until smooth.
Tip: make a small slice in lemon and lime and warm in microwave for 10-15 seconds to soften and squeeze juice out easily.
Add water or olive oil to achieve a thinner consistency, or add more avocado for a thicker consistency.
Place chicken on plate and garnish with the sauce and a sprig of cilantro, or you can broil it with the sauce on top for about 5min. Serve with your favorite sides. I chose green beans and sautéed spinach and brown rice.
For the freshest and best priced vegetables, I love to shop at Aldi. They have great prices on vegetables and other great products!
Don't forget to store any leftover sauce in and airtight container, it will last a couple of days in the fridge.
